Prawn Puri

Ingredients for masala

1lb Prawns
3 tablespoons Oil
2 crushed garlic cloves
1" cube root ginger, crushed.
1 small onion finely chopped
1 small green chilli finely chopped.
1 tablespoon dhania
1 teaspoon salt
2 tablespoons vinegar
2fl.oz. double cream

Ingredients for Puris

2 cups chappati flour
1 teaspoon oil
1/2 teaspoon salt
water to mix

Method for Masala

  1. Fry Onion, ginger, garlic and chilli until soft.
  2. Add salt and dhania and fry for 1 minute.
  3. Add vinegar and prawns.
  4. Fry to reduce fluid to a thich consistency.
  5. Add cream and heat but don't allow to boil.

Method for Puris

  1. Mix all ingredients to make a hard dough.
  2. Knead well.
  3. Split into small balls and roll out to 6" diameter circles.
  4. Deep fry turning once.

Serve masala poured over puris. An excellent starter.
