Basic Curry


6 oz. Chopped Onion
4 teaspoon Dhania Powder
1/2 teaspoon Haldi Powder
1 teaspoon Chilli Powder
2 teaspoons Garam Masala
1" Cube Root Ginger made into paste with Garlic
6 Garlic Cloves made into paste with Ginger
1 teaspoon Paprika Powder
3 teaspoons Salt
200g Chopped Tinned Tomatoes
1 tablespoon Fresh Coriander Leaf
6 tablespoons Cooking Oil
1 1/2 lb. meat or vegetables


  1. Heat oil in saucepan.
  2. Add onion and fry until golden brown.
  3. Add a little water, garlic and ginger paste and fry for a further 2 minutes.
  4. Add Dhania, Haldi, and Chilli, 1 teaspoon Garam Masala, Paprika, salt and fry for further 2 minutes.
  5. Add Tomato and fry until you see oil.

This is a basic curry sauce. You can add anything you like to this e.g. meat, chicken, potato.

  1. Add meat to masala. Fry on high heat until you see the oil. (About 10 minutes.)
  2. Add 3/4 pint water and cook on low heat until meat is tender.(About 10 minutes in a pressure cooker)
  3. Add remainder of Garam Masala.

Before serving, add the chopped Coriander leaf.
